Executive Chef, Paolo Coluccio
A master of the culinary arts, Executive chef and Manager Paolo Coluccio brings his expertise in food and wine together in a manner befitting the storied heritage of Tuscan cuisine.
Paolo hails from the north of Italy, and has been an integral part of shaping Monteverdi’s culinary experience since its inception. In fact, it can be said that Paolo is Monteverdi’s first Artist in Residence.
Prior to moving to the Val d’ Orcia, Paolo lived and trained all over the world. From London to Bombay, Paolo learned the techniques and culinary traditions that create the variety of his artistry. Paolo’s cooking philosophy is brilliant in its characteristic simplicity- only the finest and fresh local ingredients, paired to perfection create the truest expression of Tuscan cuisine. Each morning, Paolo peruses the local farmers market for fresh fruits, vegetables, cheeses, and meats. He even grows many herbs and spices of his own right here in the garden at Monteverdi. One of Paolo’s signature dishes is a lavender risotto where the lavender is harvested literally seconds before its introduction to the dish.
Among Paolo’s other specialties is his expertise in the pecorino cheeses for which Tuscany is so well-known. He’s also incredibly well versed in the region’s most famous wines from Brunello di Montalcino and Vino Nobile di Montepulciano to the French inspired vintages of our neighbor, Tenuto di Trinoro. At every meal Paolo strives to create an atmosphere of learning and loves sharing his knowledge and expertise with guests and friends.
Paolo currently lives in Sarteano, Italy with his wife, Anja, and his daughter, Sofia.
