Recipe One

Phyllo Basket with Radicchio, Speck, Balsamic, Pecorino and Prosciutto

INGREDIENTS:
1 package mini phyllo dough baskets 
1 med. yellow onion, diced
1 cup of speck cut into strips 
2 whole radicchio, sliced 
1 ½ cup sheep's milk cheese, grated 
20 slices prosciutto 
1 cup good balsamic vinegar

METHOD:
Sweat onions and speck until they start turning golden. Remove the white core of the radicchio and slice. Add the sliced radicchio. Add the balsamic vinegar until the radicchio is coated, not completely covered. Cook down at a simmer until the balsamic vinegar is completely reduced and caramelized.

There should be no extra liquid. It should be a radicchio and balsamic compote. Shave the cheese, slice the prosciutto leaving a think layer of fat on the slice.

ASSEMBLY:
Place the radicchio compote in the phyllo basket, add the cheese on top, finish with a rose of prosciutto on top.
