A Culinary Experience

Recipe Two

Sweet Krapfen with Hazelnut Cream Center

180g warm milk
60g granulated sugar
6g active yeast
3 large egg yolks
60g unsalted melted and cooled butter
Pinch of salt
375g AP flour
Vegetable oil for frying
Confectioner's sugar for dusting
2 cups of mascarpone
2 cups of heavy cream
1.5 cup hazelnut praline

Combine milk and sugar and yeast in a bowl. Allow yeast to dissolve. Stir in egg yolks, the lukewarm butter and salt. Wisk combining the ingredients. Add flour and with mix until you have a sticky dough. Add remainder of the flour and mix until very smooth. Place in a bowl to rise for 1 to 1 ½ hours. 

Place the risen dough on a large floured surface. Lightly roll out the dough to a ½ to ¾ inch thickness. Cut out rounds, about 1.5 in. Allow the rounds to rise another 45 minutes. They should be noticeable puffy. This is a very important step so they will be fluffy when fried. Fry at a 320/330 degrees F.

Whip the heavy cream until it forms stiff peaks. Mix the praline and the mascarpone until well incorporated. Fold in the heavy cream. Place in a piping bag. Refrigerate until ready to use.

Pipe the hazelnut cream into the center of the krapfen. Dust with powdered sugar.
