A Culinary Experience
Potato Croquettes with Truffle "Fonduta"
2 cups of mashed potatoes
1/2 cup of caramelized onions
1/2 tsp chopped rosemary
Salt and pepper
Eggs, flour, and breadcrumbs for dusting and frying
Vegetable oil for frying
2 cups of cheese for melting (fontina or young sheep’s milk cheese)
Black truffle paste
Boil potatoes with skins to make mashed potatoes. When cool, peel the potatoes. Potatoes should be dry. Sweat chopped onions until golden. Incorporate into mashed potatoes. Season with salt, pepper and add rosemary.
Melt the cheese with just a little bit of cream. It should be melted into a paste-like consistency. Incorporate the truffle paste. Season with salt and pepper. Cool.
Roll the potato mixture into small rounds. Place a small cheese ball in the center and cover it with the potato mixture. Coat the potato rounds with flour, egg wash and bread crumbs. Fry until golden.
